rapunzel salad

I learned something new the other day. I was dividing my self-seeded clumps of mache and another gardener at the community garden happened to mention a plant called rapunzel salad or corn salad. That's what I'm planting, I said. It's also called valerianella.

What I learned is that in some versions of the tale, mache is the plant Rapunzel's mother craved when she saw it over the fence in the witch's garden. It's my second favorite winter green, after kale.
