Default Had to pick my peppers - will any ripen?

Due to a frost prediction, I had to pick all my bell peppers. I have bunches in various stages: some starting to turn red, some mature but still green, and some smaller and not quite mature ones. Any chance any of these will finish ripening off the plant? Anything I can do to help make that happen?

Ideas for what to do with all these peppers? Do peppers freeze well?
