Default Black Hungarian

I have several plants growing, with a large amount of fruit set. The majority of the fruit are half black and half green. The black side is a deep color, and I picked these thinking they were ripe. It was after I picked them that I realized the other side was green. It is my guess that the side of the tomato that was facing the sun was the black side.

Should I wait for the remaining fruit to be fully black before I pick? And the half and half fruit - can I save seed? Will the heat factor change if I wait until they are fully black and/or eventually turn red?

I've never grown peppers before and am growing for other people so I want to give them the peppers when they are fully ripe.
