Default Need help identifying exactly what I'm dealing with.

Hello All! I have been searching the internet all morning and am still not 100% sure what's going on in my garden. Any help identifying these issues would be greatly appreciated Thanks!

Pics 1-5 : yellow pear tomato plants : spots, rolling and smaller growth up top
Pics 6 : Tomatoes on other side of garden : rolling leaves

Looks like you have a number of issues there, bug damage is obvious on the tomatoes.
The 2nd pic looks like sunburn.
That 5th pic looks viral, which maybe related to the insect problem.
The 6th pic looks like physiological leaf roll which is no big deal if that's what it is.
The squash & watermelon looks fungal but I don't know what it is.

Maybe some Texas gardeners here can offer an opinion, the problems you have down south are sometimes quite different to what we have up north.
