I have only bought them at markets pickled, and they were delicious! Would love to try and grow some next year ... but what DO you do with them?

Pickle them!

I have only 1 ripe one so far, so I used it in salsa but I pickled them last year - amazing!

PM for the recipe I followed.

Allow one or two big pods to fully ripen on the plant and you'll have more seeds then you'll ever need! After they are ripe, slice them open on a plate and allow to dry. Should yield lots of seeds.

I save seeds fro trading but a better option for me was to dig the plant up and bring it inside. I over wintered it and brought it back outside in the late spring. It is the same size as last year, but there are many more pods this year.
