I don't happen to have any habanero handy, but I wonder how these would be with some of the extra-hot New Mexico that arrived in my Christmas box from Albuquerque as a substitute?

I think I'll give them a whirl this morning. Capsacian is very good for turning on your endorphins and my endorphins need all the help they can get with the miserable weather we've been having!

Most of the fresh roasted greens you'll see being done in the Southwest intended to stay there are put up in the little deli containers that are about 3-4 inches across and 1.5 inches high and then frozen. You can often go watch your batch of chile rotating while it roasts, then drag your containers home straight to the freezer. My son in law has his own little freezer just for the chile hahah!
