I reconstituted the de arbols and used them with my peppers to make a red hot sauce then I made some green sauce too. I strained the whole thing then used the food processor to blend them together. I used a sieve to strain just the liquid and saved the mash to use for something else. I see a food mill in my future.
I also started 2 more jars of habaneros, jalapenos and hatch peppers to make a green chow chow using the new airlocks. I started those last night and no bubbling yet. |

It's hot at first but dies quickly and I like the dried de arbols flavor in the red sauce, it should get better with time.
I need to find some zantham gum, the sauce will separate some after sitting. I like it overall and now I want to start adding other spices to kick it up a little. |

I think I'm gonna start selling hot sauce once I get a few recipes down. My sister already sells jellies, jams, salsa and other stuff at a bunch of shows, festivals and farmers markets so she'll be the salesman and all I have to do is make it. I'll have to add vinegar and waterbath so that will take some testing.
How do they dry the peppers you buy like dried de arbols or any other dried peppers for that matter? I bought these at a place that only sells vegetables year round and I know they get some produce from Mexico. |

RJ, be sure to check the Dept of Ag or whatever oversees food production/sales in your state. In Oregon, there are restrictions on canned foods. For hot sauce, I would need to use an approved tested recipe (OSU or NCHFP or Ball) and batch test with a pH meter since it is an acidified product. There are other restrictions if I didn't grow the ingredients.

Barb I have looked at videos and web sites.
I have seen stuff advertised on line. The are all sorts of places where people sell stuff. I have also looked for information about Texas and their rules. The official Texas site is so confounded messed up like any other government site it is unreal. As it stands now with the Texas cottage law we cant sell salsa canned tomato products or hot sauce but we can sell jams and jellies. We can only sell cucumber pickles but not any other type of pickle. We can sell from our home or at a market but we cant sell on line. For it to be legal we have to see the person buying the product in person. You have to take a food safety course but you cant be inspected by the health department without them having a warrant. It states you cant sell fresh vegetables from your home under this law. You cant sell a strawberry or other fruit dipped in chocolate under this law. It allows HOA's to take jurisdiction over state and city law. This is BS big time. I know the stuff I make for myself is as safe or more safe than the stuff I get from the store. Every acidic thing I make gets a dose of powdered citric acid in it on top of the already safe acidic recipes. It also gets a shot of fruit fresh to preserve color. Worth |

I guess I'm lucky Louisiana has a more common sense approach and says sell it all except meat & fish, here's the newest law guidelines
New law extends application of the general exception to food preparation regulations provided therein to all home-based preparers of low-risk foods whose gross annual sales are less than $20,000. New law provides that for purposes of new law, "low-risk foods" shall include all of the following, none of which shall consist of any animal muscle protein or fish protein: (1) Baked goods, including breads, cakes, cookies, and pies. (2) Candies. (3) Dried mixes. (4) Honey and honeycomb products. (5) Jams, jellies, and preserves. (6) Pickles and acidified foods. (7) Sauces and syrups. (8) Spices. New law requires individuals who prepare low-risk foods in the home for sale, as authorized by existing law and new law, to affix to any such food offered for sale a label which clearly indicates that the food was not produced in a licensed or regulated facility. New law stipulates that no individual who prepares low-risk foods in the home shall sell such foods unless he has applied for and been issued all of the following: (1) A Louisiana General Sales Tax Certificate from the Louisiana Department of Revenue. (2) A local sales tax certificate from the local taxing authority of any jurisdiction in which he intends to sell foods. Effective Aug. 1, 2014. |

LA hasn't had its fare share of out of staters come in and run for office.
They had some new laws they tried to pass but it didn't event get talked about so we will have to wait and see what 2017 brings. Some guy came by my house a awhile back ranting and raving about our town and was running for city counsel. His complaints were endless. Chickens horses goats and cattle in town. The new town hall we needed desperately. The convention center. The preforming arts center. New sidewalks. People selling stuff on the side of the road in town.(Really) Where Bastrop is thriving other towns are falling apart. They went out of the way to make the new sidewalks look like brick sidewalks and to preserve downtown. We have a lot of movies made around here because of it. Where are you from?
