Who in their right mind would put a pot of beans on the stove and go to bed.
I do and here they are after being on the lowest setting all night in a cast iron kettle. One one pound bag of beans soaked rinsed and drained. Six huge spoons of chilli powder. One onion chopped. One spoon of chilli arbol. One spoon of garlic powder. One half teaspoon of salt. One quarter stick of butter. Fill to almost the top bring to simmer stir. Looking good Worth! Glad to know someone else likes their cornbread without sugar. My wife likes those Jiffy Mix corn bread muffins and I tell her if she'd just add some icing she'd have cup cakes they're so sweet. Can't stand the things.

While everyone else is eating lean I have decided to make fat soup.
No really I picked up some pretty good looking fat back and am going to attempt to make crock pot lard. I added some water and am just going to sit back and let it happen. Worth IMG_20151104_587.jpg |

While the fat soup is cooking I decided to make some peach wood smoked Mediterranean sea salt.
I looked in the store and they had some oak wood smoked salt for I think 1.75 an ounce. This salt cost me that much for a pound and a half. I have three pounds of it smoking. After I took these pictures I put another pan in. Worth IMG_20151104_5467.jpg IMG_20151104_56449.jpg |

Back to the smoked salt I have looked at a few videos and I dont think these folks get it.
You cant smoke salt in an hour and not ever stir it. This may go on for days about ever 30 minutes or so I am stirring the salt for an even coating. This is why I am doing 3 pounds of salt so I dont have to do it again. The stuff I saw in the store was black. Worth |

The last pint of lard a little darker but still good and the cracklings the best part.
