Beautiful!
I've taken to having a crockpot of puree cooking down every day now to address my overflow. The change from drought to rainy has resulted in lots of splits here so it's hard to do anything else with them. |

I pick a bucket full every evening then wash, core and quarter and run them through a Norpro Sauce Master to get puree. A 5 gallon bucket of tomatoes fills 2 large crockpots for me. About 16 hours of reducing on high for non-paste varieties gets me to a nice consistency for my purposes. Then I wash the crockpots and start again the next night.
I've been freezing it and plan to make a big run turning it into pasta sauce and canning it all at once. Right now I should be out there picking another bucket, but I'm procrastinating. |

I once went to a tomato symposium and tasting and they served us tomato sorbet. It was glorious!
I wish I was under a pile of tomatoes right now. Soon, I will have your problems I hope! |
