Default Brown and shriveled seeds

I have a what looks to be ripe red Bell Pepper. But when I opened it and pulled the seeds out to save them they turned brown and some shriveled what causes this? The fruit not being mature even though it was full red?

Bell Pepper seeds will show some signs of "shriveling" as they dry. Some will also darken, but I haven't had any turn dark colors. I usually avoid any seeds that show a black spot on them. In my experience, seeds with the spots have germination problems.

Most will have a slight color shift off of white-white to more of a light "cream" color.
