Default Corn and Cornmeal Recipes

Ok here's what you do.
Buy popcorn kernels in bulk
buy brown paper bags
put 1/3 cup of popcorn into brown paper bag
staple once in the middle (though it's metal the staple is too small for the microwaves to bother it or do any damage)
Put in the micro wave and hit the popcorn button
If you don't have a popcorn setting then buy a new microwave that does....or just listen for the kernels popping and when they slow down then pull it out.
You'll burn it a few times till you figure it out.

Oh yeah..eat it with a tomato..this is a tomato recipe forum..or eat it while looking through the tomato catalogs.

Sprinkle with garlic powder, parmesian cheese and salt after popping instead of butter. Healthier and less fattening.

Use any cornbread recipe you like and add one bunch of chopped green onions, one can of sweet corn kernels and one can of mild green chiles.

Default Muffins

This is my muffin recipe from before "Got Worms?" was born. From another life:

Bluezman's Blasphemous Yankee Corn Muffins

It was a little cold this morning

Thought I'd make some corn muffins to go with my coffee.


Ingredients

1 cup unbleached all purpose flour
1 cup cornmeal (I use fine yellow)
1/3 cup sugar
1/3 cup powdered milk
3 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground anise seed (aprox.measure)
* raisins (optional)
1/2 cup of corn oil
1/4 cup honey (I like wildflower)
2 XL eggs
1/3 cup milk
1 teaspoon vanilla extract

* if you remember to soak 'em in bourbon the night before.


In a bowl, mix well all dry ingredients.
In a separate bowl whisk wet ingredients into an emulsion.
Add the emulsion to the dry mix and mix together.
Evenly distribute into a greased, 12 muffin pan.
Bake at 375 degrees for l5-20 minutes.
Use toothpick to test for doneness.

I know, I know...southern corn bread and corn muffins doesn't have any sugar or honey.
......but since I've named my recipe "Yankee Corn Muffins" I get to put whatever I want in.

These are great with coffee for breakfast or a cup of tea.

So... Here's some pix of the process:

Get yer stuff ready. (wrenches optional)

Dry stuff

Oil eggs honey

Oil eggs honey milk vanilla

Emulsion

This would be a good time to add raisins if you want.

Lets see what we've got

Oh Yeah!







As you can see there are no raisins in my muffins......but they were still outstanding! The ground anise seed comes through like a hint of almond. The outside has that slight cookie crispness to it, and the inside texture is light and airy but not dry. Sweet but not overly so for breakfast. I would not use this recipe for corn bread, though. It would not be good to have with chili, etc. This is one of my better recipes. Enjoy

The raisins have good taste in the liquor they bathe in! Going to borrow your recipe - been looking for a corn muffin that would be right for breakfast.
