New Mexico Chile Pepper Institute Scoville Chart
I was there a few days ago-the chile pepper institute-and got them to print out the chart they have from testing peppers for scoville units. I scanned it.

We were also lucky to visit NMSU and get to the Pepper Institute store and purchase new-to-me seeds, including the Heritage 6-4, Heritage Big Jim, and the Bhut Jolokia. Classes were in session so we could talk with people about the peppers. We even visited their research gardens and greenhouses and saw what to expect in 2011. We purchased 30# of medium and hot roasted chiles from FFA students and have been enjoying them as well as freezing them for future meals. The chiles we purchased were Hatch's Big Jim only, so I'm looking forward to my new seeds.

La Posta is a well known, historical restaurant that has good food. Wish I had known you were going to be there. I would have given you the name of a restaurant that is a locals place mainly, but has been featured some in the national news. It has probably the best New Mexican food I have eaten. Its called the Little Diner. Its in Canutillo, about 20 miles from where you were. Check out the menu: http://www.littlediner.com/

Think we'll be back down there near the holidays, so we'd love to stop and try this restaurant. Love New Mexican food!
Already planning for 2011 and need to find small(er), hot, thick skinned peppers besides jalapenos. |

There is another great place in Las Cruces called Nellies. They only take cash, but its fantastic for New Mexican food.

Michael, Im so glad to see you call it "New Mexican" food. I live in Tucson where we have great Mexican food. And yes, there is a differtence between the two.

And my wife and I have moved to San Antonio, so we are not near the Mesilla Valley anymore. Getting our just harvested green chile has become more complicated. We cannot grow enough green chile for our needs, so buy from Biad. They did have free shipping this September, so we were able to stock up.
