Default freezing lemon zest?

My neighborhood market had a great deal on fresh lemons - 5/$1 - they weren't jumbo but nice sized. Can I freeze the zest to use like fresh zest? Or better to dry and rehydrate? I zested and then juiced - for baking projects, etc. Thanks - Piegirl

You probably would lose some of the volatile oils either way, but I've done both. I prefer freezing, as long as I can package the zest tightly.
