I'm Smoking it
I fired up the drum today to smoke some beef Dino ribs, turkey drumsticks and stuffed wings. I used Crystal's hot sauce for a binder on both the ribs and drumsticks, the rib rub is some cheap beef rub I bought to try on the ribs. That rub smells mostly like salt, black pepper and garlic so it should work fine. I'm trying out a new rib rub I made on the drumsticks, I'm curious to see if it gets burnt with the sugar I put in it. The wings were bought seasoned, marinated and stuffed with Cajun sausage, onions, bell peppers and garlic. Grandpa is gonna eat good tonight!!!
Everything went on at 12:30 and they're smelling delicious. The drum is rolling at 245 puffing some hickory smoke making the neighbors hungry.

That works too Worth, I've done a few whole hogs the same way and it was some of the best I've eaten. That burger should be awesome with bacon and a fresh sliced tomato!!
upcountrygirl, You need to schedule that in every week. If I don't have some Q at least once a week I feel cheated. I think I'm addicted to the smoke and I may have a problem. 3.5 hours in and I just pulled the turkey to put in a pan with a little apple juice to finish them off. The rub worked good and made a nice skin color without burning. The ribs are smelling so good!!! I still haven't decided if I'm gonna wrap them yet. Some do and some don't but I know if I wrap they'll be juicy and delicious. I'd hate to ruin a $30 rack of ribs trying something new...

I saw this while researching removing the fat from ribs and thought to myself, HMMM I need this cool set up.

We cook ribs the way Jan likes to. The first hour or so without foil, and the rest with foil sort of on it She loves smoked barbeque baby back ribs.
Cough...I did cook some in the slow cooker...meh. |

I forgot to post finished pics.
I wasn't really impressed with these ribs. I've been eating beef back ribs and they are so much better to me. Maybe it was just this rack so I'll try again. I pulled the bones and cut it in half then sliced it like brisket, it's good but they don't have as much marbling or flavor as beef back ribs. Everyone who ate liked them but I'm going for max flavor and these just didn't make it for me. The turkey was awesome, like spicy smoked ham.
