Beautiful!

I've taken to having a crockpot of puree cooking down every day now to address my overflow. The change from drought to rainy has resulted in lots of splits here so it's hard to do anything else with them.

Same here Mark, I could hardly find enough to take a picture of with all the cracking and splitting. I made sure to turn them all to their good sides.
I have never had so much splitting in all my years growing. Some of the varieties are extreme. My Anna Russian are splitting right down the sides so you can see the seeds inside.

It's depressing, I have some varieties that no matter which way I turn them there just isn't a good angle to take a picture from. I picked two buckets full of splits yesterday and there is probably still that many more just in the reds and pinks. I need to go to camp to pick up the big Nesco cooker thats up there and put it into service as well.

The pastry chef at the restaurant I was at today was suggesting they try to create a tomato dessert with any of the sweeter varieties to use up splits, which is starting to sound like a good idea. My problem is the garnish she wants to use is the currant tomatoes, which I don't have a ton of...

I pick a bucket full every evening then wash, core and quarter and run them through a Norpro Sauce Master to get puree. A 5 gallon bucket of tomatoes fills 2 large crockpots for me. About 16 hours of reducing on high for non-paste varieties gets me to a nice consistency for my purposes. Then I wash the crockpots and start again the next night.

I've been freezing it and plan to make a big run turning it into pasta sauce and canning it all at once.

Right now I should be out there picking another bucket, but I'm procrastinating.

I once went to a tomato symposium and tasting and they served us tomato sorbet. It was glorious!

I wish I was under a pile of tomatoes right now. Soon, I will have your problems I hope!
