Tomato Colors and Antioxidants
Beyond the much known fact that red tomatoes produce Lycopene, and blue/purple/black tomatoes produce Anthocyanins, I would like to know if orange tomatoes pruduce Alpha and beta carotenes, yellow tomatoes produce Beta-cryptoxanthin, yellow-green tomatoes produce Lutein and Zeaxanthin, green tomatoes produce Sulforaphane, isothiocyanates and indoles, and do white tomatoes produce Allyl Sulfides.
I would appreciate it if anyone has a reference on this issue. Charley |
