Whatever it is, it has just about wiped these 2 plants out in just over a week

It is hard to tell but it looks like you might have spider mites; maybe some early blight and or fusarium wilt. I know that is not much help but you actually could have them all at the same time. You can cut a fairly large stem on one of the plants to check for fusarium. Inspect the underside of the leaves for spider mites or even whiteflies. Spider mites are very hard to see but will devastate plants in really hot weather. With early blight you can spray with the dilute bleach solution or cut off all the affected leaves and spray with a good fungicide like Daconil which will slow it down.

I'm pretty sure it's EB perhaps with some heat stress added to it.
