Default Looking for recommendations

I am interested in opinions of what is the largest most prolific bi-color you have grown? I am also looking for large slicers in any color. I am also interested in a tomato that takes forever to ripen... Longest days to maturity? I live in the south where the season is fast and furious and then its done. I am trying to do my best by getting a jump on the season (using my hoop house high tunnel) and also a tomato that would be as late as I can get to ripen. I know what some of you will say about trying to stagger the seeds and plants but I am very limited on time and will not have the luxury of staggered plantings or seed.
I am not interested in long keepers per say as most are not very flavorful, but a variety that is tasty but ripens last.
