The Last Garden Tomato Sandwich
Today is a sad day. I'm sitting down to what will be my last garden tomato sandwich of the year. They have become a breakfast staple these last couple of months.
The recipe has remained unchanged, but the tomatoes have varied throughout the growing season. My criteria is that it has to be large enough to fill the bun with a single, half inch thick slab. I started off early with the Pink Honeys, moved on to Sorrentos, both of which were okay, but a bit on the mild side. I finished up with two new favorites -- Tastywine from the dwarf project, and Virginia Sweets. Both have enough umph to stand up to the other ingredients. Today's sandwich stars a slab from the last VA Sweet. I do have some Tastywines left, but nothing large enough to fill a bun. I call it a Tomato Sandwich with the Essence of Bacon -- spread a little reserved bacon fat on both sides of a sandwich bun and grill until lightly toasted. Add a smear of mayo to both halves of the bun, add the tomato slice and enjoy! I'm almost out of bacon fat anyway, so I'll have the whole winter to replenish the supply in time for next year's tomatoes. Will be trying some new sandwich worthy tomatoes next year, but would love to hear about anyone else's favorites. |
