Default Growing from store bought potatoes??

Ok for one I do know that they do put a growth inhibitor on some store bought potatoes and my parents always bought seed potatoes.
I have grown potatoes from store bought potatoes with good luck.
I was just wondering if I could go to the store and get some of the fingerling and other fancy potatoes and have any luck growing them.
They use to sell the so called fancy ones here in town but I guess due to the demographics of the area (hillbillies) they have quit.
So now I would have to drive about 35 miles to get any and they are way high and I do like them.
Or should I just order the things and be done with it?

If this has been answered some place I couldn’t find it.

Another thing, I’m wondering about here in the Austin area what time I should put the things out I’m thinking maybe December as the ground never freezes here to speak of.

I eat raw potatoes too, you can defiantly tell the difference in them raw sort of like wine tasting.
