It was a little cold this morning
Thought I'd make some corn muffins to go with my coffee.
Ingredients 1 cup unbleached all purpose flour 1 cup cornmeal (I use fine yellow) 1/3 cup sugar 1/3 cup powdered milk 3 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/8 teaspoon ground anise seed (aprox.measure) * raisins (optional) 1/2 cup of corn oil 1/4 cup honey (I like wildflower) 2 XL eggs 1/3 cup milk 1 teaspoon vanilla extract * if you remember to soak 'em in bourbon the night before. In a bowl, mix well all dry ingredients. In a separate bowl whisk wet ingredients into an emulsion. Add the emulsion to the dry mix and mix together. Evenly distribute into a greased, 12 muffin pan. Bake at 375 degrees for l5-20 minutes. Use toothpick to test for doneness. I know, I know...southern corn bread and corn muffins doesn't have any sugar or honey. ......but since I've named my recipe "Yankee Corn Muffins" I get to put whatever I want in. These are great with coffee for breakfast or a cup of tea. So... Here's some pix of the process:
