I was forced to pull all of mine green this year (frost warnings earlier this week), only ended up with about 2 dozen mature green Poblano peppers from 8 plants. My paprika peppers havd just started to get red on the tips, so letting them bag ripen. Jalapeños, I picked them all dark green. Serrano and Cayennes were green too. Bells never really grew fast, but did get a few (also green). Cubanelles, the few that I got were yellowish green.
