MY LONESOME DOVE CHILI on impulse
Riding through the grocery I saw Pork shoulder marked way down and a very small boneless one for less than five dollars. Grabbing that my way to the Latin section searching for chilies. Nothing dried looked decent, but there was a tall plastic bottle of a Latin ground version. When I got home I was able to use about a dozen of my less than perfect tomatoes that I mixed with a pint sized beer and a bit of water, Then grabbed some parsley and oregano from the herb garden. The half bottle of powdered chilies were too hot for the wife, so I added about a cup and a half of dark, sweet, Spanish paprika to tone it down. Then salt and pepper to taste. Cooked it all down then strained.
Chapped up the pork, added chopped onions, lots of cumin, garlic and put all into pressure cooker on low for a few hours. With so much meat, I can now have the chili and plenty of meat for other uses like tamales, and empanadas. The liquid will make a great sauce. All dedicated to "PIG" from Lonesome dove.
