First Chilicostle Peppers

These were really nice, had a bit of heat. I wanted to make them into rellenos but they are a little small to stuff, so I toasted them and made cheese and Chilicostle quesadillas. Yum!

Sexy looking peppers, and IMO a pepper with no heat isn't a pepper. Do they taste smokey like they look?

I thought they were kind of earthy, which sometimes translates to smokey. Hope that makes sense.

And they do look sexy.

In their most basic form they are a Poblano pepper toasted and seeded, the blackened skin peeled then stuffed with cheese. At this point it gets coated with an egg batter and fried. It's deelicious!!

It's an extremely flexible dish and I would guess there's thousands of versions. Almost any stuffable pepper can be used and most anything you want for a stuffing. Raisins, nuts, meat, avocado, etc. I think, technically, a stuffed Jalaneno is a relleno.

A lot look like this but some don't, lol this is starting to sound mysterious
