I agree temperature makes a big difference. My rule of thumb for fermenting tomato seeds is 3 days for temperatures in the 90s, 4 days for temperatures in the 80s, and 5 days for temperatures in the 70s. If I stop sooner than these rules I sometimes encounter some gel on the seeds, and I go much longer the seeds often begin to turn brown.
