I have lots of it as well. Guess I'll have to bring a bucket of water to throw the purslane in when I go weeding. I have tasted it before, but never saved any for salads or meals.

My mother in law introduced me to verdolagas (Spanish/Mexican name for purslane) several years ago. I love it, and the idea of eating your weeds is awesome!

Early in the season before a lot of other stuff is ready to eat, I keep pinching back purslane, lamb's-quarters, and stinging nettle for the cook pot. Later in the season, they all become too determined to set a kazillion seeds so I rogue them out and eat the intentional produce instead.
