Good Lord! Might as well go ahead and drill and frack for a well!

I'm honestly not trying to grow a huge plant, I just want to see how big it can get since it was obviously chomping at the bit to get out of that seed coat.

Like lower and lean with a single stem. Not the best pic but you can see the strings for the maters & cukes. I just lower and lean them as they grow and slide the hooks down.

Now that is a great idea! I was thinking of taking a line out horizontally from the top of the stake, and tying the stalks to that. Do you think that would work?

Hard to say, my best guess would be it might be ok for a bit but a big storm comes through and you end up with a mess.

Last year, I had four that were close to the top of the stakes- but that was July. And in September, the Cherokee Purple on the right got up to 12 feet.

I would get 2x4x8' and rip it into 2x2 s. We did that 2 days ago for my buddy's tomato plant in a pot. Made a 24" x 24" x 8' frame around the pot, sitting on concrete.
All you need is a table saw, some screws.

Like Worth suggested, I may have to make it into a cone shape, like a derrick. The 8 foot contraption you built above is fine, but at heights over 10 feet I'm afraid the center of mass will be too high, and it may topple over. The ground right there is not completely level, either.

You want to make it like tee pee ? Tripod ? Quadpod ?
You can train them to cascade.
Even if a branch breaks , with just, say, 1/3 intact it should be fine. I know this by experience.
