Worth, uh-huh stomach shrank. I've been finding that situation too. Suddenly All-You-Can-Eat buffet means 4 items - one trip. I used to love eating like, "Hagar the Horrible" There are a few times when I'll eat a lot. I love GREAT pizza - not good or half-... pizza, but Great Pizza.

I like/love home cooked Authentic Mexican food, but TexMex holds a place in my heart too. Both are almost as good as Cajun food. My favorite food is seafood and fresh water.

Worth, my stomach lurched when I saw that picture. Sadly I can't eat those kinds of food anymore. Glad for those who can.

Here it is all set up to make sausage.
I will see how the ketchenaid mixes meat.
The marble lazy Susan is to easily wind the sausage as it comes oit of the stuffer.

I have but I have not found anything that helps with food that is spicy or has a lot of sauce.

Spicy does not bother me.
Food that is hard to digest like fried food corn meal, corn ships, along with raw vegetables.

Here it is the best sweet Italian sausage I have ever made.
The ingredients are ground fennel seeds salt fine grind black pepper garlic powder onion power and onion flakes powdered milk pork butt.
The ketchenaid mixer worked great mixing about 5 pounds at a time.
The grinder was fantastic I ran the meat through The 3/4 plate.
Mixed in the spices ran it through the what looked like the 5/16 plate then mixed again by hand and ran it through the 3/16 plate.
You couldn't feed the machine fast enough to even make the motor change pitch.
Very simple.

Thanks.
Here is the rest of it.
Olive loaf and Knack wurst.
The olive loaf needs to be cooked in 170 water tomorrow and it will turn pink.
Cheers.
Worth.

Lookin' good, Worth - time for a well deserved rest and refreshment. Will you freeze the excess sausage or ??

I'll bet the next piece of equipment for you is a sous-vide setup. That way you KNOW that olive loaf water stays at 170...

P. S. All of a sudden I can see your photos again - glad of that!

Default High tunnel heat/cool

27 x 48 gothic high tunnel.
Somehow thought I could engineer my way south a couple zones.
18 x 4" ground coupled pipes
2000cfm should provide 80kbtuh cooling and 50kbtuh heating.
Now if I could just get the darn frame up.....
