I'm going to post these pictures on my phone and then go to the computer to make comments.
So for those of you following if you look and don't see anything it will be there soon.
Okay I am here.
what you see is the Manzano and Fresno chilies cut up and the seeds removed so I can save them.
You will also see the amount of chopping in the food processor with nothing else added.
In the bowl is where I added a little canning salt, lime juice, citric acid, sorbic acid, a pinch of sugar to off set the acid but not enough to make it sweet, powdered garlic, powdered onion, a dash of low sodiom V8 and olive oil to make it shine.
I tasted this stuff and it is real good.
On the right you will see another salsa I made yesterday that is a little more involved.
Same peppers, lime juice and powder but with chopped onion and a can of tomatoes and chilies cumin and some powdered chilies.

Wonderful job of showing us in step by step directions. I appreciate it. The salsa looks yummy!

I imagine you wear gloves when cutting open your chilies? I cut open a couple of my African Red Peppers the other day, I took out the seeds with my fingers and nails, and a few minutes later my fingers were slowly burning, and over the next hour it kept getting hotter and hotter. I rinsed and washed my hands immediately, then soaked in vinegar to try to take out the heat. My fingers burned for about four hours.. LOL.. My mistake. I know the seeds are the hottest part..Duh!!

No I dont wear gloves I have sort of gotten used to it.

Ginny yesterday I had an ultra fine powdered hot pepper explosion in the kitchen.
Hot pepper powder everywhere and the place is contaminated.
My whole body was on fire inside and out for hours.

I took a shower before I went to the store and ended up with it all over my face.
This morning I got contaminated again and it has just now stopped.

Here I am going to post a link to the type of little hole in the wall places I have to go to get what I need.
Sometimes I get some strange looks but they get used to me and start to be more friendly.
Especially when they see some of the stuff I buy and that I am friendly to them.
These places are like an oasis for people displaced from their homeland and I welcome them.
It is absolutely amazing what a smile on your face and a warm greeting will do for friendship instead of a frown.

Those Fresno Chilis pictured above are huge. Everything I read about them describes them as 2-3" long and hard to tell from Jalapenos. Yours look a lot bigger.

Cole I guess these were maybe 2 inches long average.
The sharp point is the tell tale sign it is Fresno not jalapeno.
I saved a ton of seeds.

Here is old faithful Smokey and the night was topped off with a big plate of spaghetti with my home canned chili.
Every time I take her picture she runs and gets in my lap.

Do you think Smokey is a Bengal? or at least part Bengal? A girl I know just adopted a stray Bengal cat. They are big, very vocal, and have an outgoing personality. Some owners of Bengals have been known to walk their cat on a leash like a dog.

Cole she is just a tiny little tabby cat we picked up at the pound to take the place of my beloved Bear Cat.

Here is a picture of my spice and other stuff overflow.
I spend all day trying to get things organized and it seems to no avail.
What do you do with stuff you will never use like the one thousand piece cheap Chinese knife set your brother gives you for Christmas?
I wanted to throw it out the minute I opened the box.
Besides I had plenty of knives and he knew it.
The guy was a magnet for the cheapest of imported junk.

Junk knife collection, they were on top of my nice over 35 year old carbon steel knives that I now have to clean up.
I have a total of 50 kitchen knives 23 of which are this junk.
The cleaver isn't half bad.
I have learned one hard lesson in life.
Never ever let company use your carbon steel knives.
I got home and the whole lot of them were rusted.
Never let a neighbor borrow your stones to sharpen knives.
I had to resurface one of my stones after that mistake.

Everything you need to sharpen a knife including a leather honing strap.
The smallest gray stone is from 1979.
The big tri hone is from 1981 a gift from my wife.
The India stone and hard Arkansas slip is a gift from a friend at work.
I have used both for ten years so he found it fit to ship them to me as a gift for showing him how to sharpen a knife.
I know some folks like the gadgets but I like my stones.
The container on the lower right hand corner is kerosene and a little oil.

Ella I wouldn't give one dollar for some of this junk at a yard sale.
The other stuff is food I will never eat and I toss it to the coons and birds all of the time.

Here are most of my favorite knives cleaned up and ready to go parked in their new home without the junk china knives.
I have two more drawers of junk to go.
Nothing ticks me off more that to not be able to get a drawer open because it is locked up with something inside.
