Dito on the Datil pepper. Datil has become my number one favorite HOT pepper, hot yes but has a ton of flavor. The best. The seeds are almost impossible to find. I live in Michigan and these plants need a long growing season, Datil is famous in St Augistine Florida and there is an interresting story behind these peppers. I had 4 plants and they produced 6 peppers each before the frost killed them. If my growing season was longer these plants would have produced a ton of peppers. In 2012 I will try growing them in containers in the greenhouse to extend their growing season, then I should have plenty to go around.

That apple butter DOES sound good!

Can you dry any of these peppers for use in winter? Last night I made dinner with some dried Chipotles as I didn't have fresh, and I definately enjoyed the flavor, even though it was dried.

Are they hotter or milder when dried compared to fresh?

you can dry any of them... we make a datil powder out of ours...
in general everything is hotter dried as you are removing a non-hot component- water.

- Lemon Drop - anyone interested in chillies should have this one in their collection
-
The "original" orange habanero, usually found sold by the name "habanero sudden death", fruity and not deadly hot.

- Almost any rocoto (C. pubescens), these are hard to get to produce any sensible amount of fruits, but the taste is great, especially when smoked.
