Oyster mushrooms

Any good recipes for oyster mushrooms? I'm thinking something with arugula and pasta with sautéed mushrooms in butter.
But, I need a more interesting sauce. Maybe arugula basil pesto.

If you're not going vegetarian you could add a touch of cream, parmasean and crumbled italian sausage to the mushrooms and arugula. Italian sausage and mushrooms are a nice combo.
