Default Olio Piccante Recipe

During my travels in Europe, I always enjoyed it when I went to a pizza place and they had spicy oil (olio piccante) in a jar to drizzle on my pizza. I have tried to look up the recipe and basically it seems to be just about any pepper infused into extra virgin olive oil. I like it real spicy, but not quite habanero heat. The recipes that I see when I look on-line is to use Peperoncino peppers, but I have researched those and it seems that it is just a generic Italian word for any of the many Capsicum annuum and Capsicum frutescens culitvars. I also see specific pepper seeds on-line called Peperoncini Peppers, but most are described as sweet or milder than Jalepeno. Since Peperoncini (the plural of Peperoncino) is just a generic Italian word for peppers, I wouldn't even be sure what cultivar they are.
My plan (for now) is just to use dried Cayenne Peppers with some extra virgin olive oil and maybe add a few small sweeter variety of pepper in the mix. Anyone else have a special spicy oil recipe that they love? I'm open to suggestions!

I think you might be on the right track with Cayennes. I grow a Franchi Italian cayenne that I dry and grind. It tastes like the red pepper flakes you find in shakers at pizza places, so I could easily seem them using the same peppers for their oil.
