Default leggy seedlings

this is the first time I grow eggplants
for germination they were at a friends place where it is warmer than here.
she forgot to tell me that they germinated and now I have very long seedlings.
Can I put them deep into the soil like tomatoes or what should I do?
there are also leggy sweet peppers

While you probably can plant them a bit deeper for the sake of supporting the stems, I don't believe they will produce roots along their stems like tomatoes do.
