I wont tell you you are wrong how could you be?
I can tell you that the things have had every chance to be garbage here this year and they have came through tasting great.
The San Marzano tomatoes have turned out to be possum food.
They love the things and will consider them to be a varmint trap for better tomatoes.

Worth, have you tried Taxi? I don't know how well it would do in the Texas heat, but that is one rock star of a yellow tomato. I have mostly stopped trying new yellow varieties. None of them grow like Taxi. My plants in the high tunnel are six feet tall. I just picked the first tomato off of them yesterday.

I just have to get what the grocery store offers in small $1.50 plants.
Maybe some day I will be able to start from seed again.

I don't think it is the best tomato - if I only had to pick a few, I wouldn't include it. But when growing a variety of tomatoes, I think it is a nice addition. I've never had them crack personally.

It isn't exactly the same as aged vinegar but it works pretty darn good.
Take a cheap bottle of Balsamic vinegar put it on the stove and very slowly reduce it down to a thick syrup or at least to one 4th of what it was.

You can then use it on vanilla ice cream tomatoes and so forth.
It becomes sweeter.
