Pickled cucumbers makes sense. Auntie Esther and I are Cherokee too. I'll call it Auntie Esther's Pickled Cucumbers !

here's how I do it:2-- cucumbers
6 tbsps.--miracle whip
1/2 --onion sliced thin
2 tbsps.--milk
3 tbsps.--cider vinegar
1/4 tsp--sugar
1/2 tsp--salt
pepper to taste
combine all ingredi. except cukes and onions, whisk well, add cukes and onions, mix well and refrigerate hour or so to absorb . could probably add other stuff like pepper etc.

My aunt made something similar with sliced cucumbers, tomatoes, onions, garlic, fresh dill, whole black peppercorns, salt, sugar and vinegar. Horseradish/currant leaf were added to make cucumbers crunchy.
My aunt preserve her salad for the winter. She had it all put in glass jars. She would pour hot water over the salad in the jar, process for 10 minutes in a boiling water bath before closing the lid. She would put jars upside-down until cool.
During the winter the salad was tasting almost as fresh. Some oil to serve...

This lady on youtube shows similar preparation, except she is using microwave instead of processing it in a boiling water bath.

The cucumbers have set in the solution for 24 hours now.
Still crunchy and salty.
Something to go with a nice beer.

my wife likes to use seasoned rice vinegar and olive oil. SOOOO GOOOOD.

Grandma kept them on the table in a covered crystal dish, that had to come from Belair coupons or free with every 3rd fill up

I was hungry for lunch today and had nothing I could really make quick. I
remembered the cucumber that was ready to pick in the garden. Out I went
and made my cucumber salad. Mine had balsamic vinegar, olive oil, salt and
pepper, and I threw some tomato in there. I was to lazy to go back into the
garden and get some dill. Tomorrow I'm going to throw some Vadalia onion
into it, sounds good.

We make salad like that with sour cream instead of vinegar. mmm

Sliced cucumbers tossed with red wine vinegar, a little dried oregano, and salt showed up on the dinner table several times a week during the summer when I was growing up.

My grandmother always made a dish of sliced tomatoes, sliced onions and sliced cucumbers in vinegar. I didn't care that much about it as a kid but absolutely love it now.

Yes the vinegar was diluted with water.... Maybe 50/50.. But go with what taste best to you... She used whatever onions were on hand.....I really liked the red best.
