Looking for Recipe Thread
Hello Barb and everyone,
Would like this recipe. Used to be able to google this particular one that sounded good, but the link is now gone. I've found the one at allrecipes.com, but it doesn't contain as much maters or cheese.

looking for recipe
Does anyone have a recipe for dried tomatoes packed in flavored oil? I buy this in a specialty store and it is very expensive. I was hoping someone had a recipe so I can make my own. Thanks in advance.

This is actually two recipes.
Oven Dried Tomatoes 3 pounds plum tomatoes, cored and cut lengthwise in half 1 tablespoon coarse salt Place the tomatoes, cut side up, on a baking sheet and sprinkle with salt. Let sit for one hour. Preheat oven to 250 degrees. Bake the tomatoes until they are almost dry yet still slightly soft, 5-6 hours. Oven Dried Tomatoes in Herb Oil 3/4 cup extra virgin olive oil 1 sprig fresh rosemary 4 sprigs fresh thyme 2 sprigs fresh oregano 1 bay leaf 1 recipe oven dried tomatoes Place the olive oil in a small saucepan and heat until warm. Remove from heat and add the herbs. Let sit for one hour. Pack the cooled tomatoes into a jar and cover with oil, turning the jar over several times to distribute the oil. Store in the fridge for up to three weeks.

Warren, without tasting the product you want to duplicate it is almost impossible to tell you how to make it. I would do this:
Write down all of the things that you can identify that were in it - tomatoes & okra obviously, but were there onions or some spice? Sweet or not? Then use the power of the internet - type "Stewed Tomatoes Okra" into Google - you don't need caps or quotation marks and see what turns up. You'll get several thousand recipes to look through. Pick a few that seem to come the closest and give them a whirl. |

I don't eat animal products, but did find this one that has butter in it by putting in the address bar words tomato okra recipe. May try this for others but here's a link: http://www.recipezaar.com/11749 Enjoy. I do tons of veggies and having health ministry I have books that use lots of veggies. No animal products. Sadly most people are resistant to change so I have plenty of these books that are part of my ministry package. I don't do okra. carolg colorado |

Warren, you could take the onion out of this recipe and sub more corn, which would make it sweeter.
8 large tomatoes, peeled and chopped 2 teaspoons butter 2 small onions, chopped 1 green pepper, chopped 1 lb. okra, ends trimmed and sliced corn cut from 3 ears (or 1 cup frozen corn, thawed) 2 teaspoons sugar 1/2 cup dry breadcrumbs Heat the butter in a large skillet and saute tomatoes, onions pepper. Add okra, corn and sugar and simmer 25 minutes. To thicken, add breadcrumbs and stir well.

Peel and chop tomatoes, bring to a boil, add okra whole or cut into rounds, add salt and pepper to taste, maybe add some fresh basil etc. Cook until okra can be pierced with a fork, just a few minutes. Put on rice or pasta.

Stewed Tomatoes and Okra
Stewed Tomatoes and Okra
2 T. olive oil 1 medium size onion, chopped 2 cups okra 2 T. minced garlic 1/4 cup water 1 T. vinegar 1 tsp salt 1/2 tsp Creole seasoning 1-14.5oz can tomatoes Put 2 cups okra in a Pyrex dish with 1/4 cup of water. Microwave 6 min, but stir at 3 minutes. Put olive oil in a hot pan and Add 2 T. minced garlic and reduce heat, sweat the garlic then add onions. Cook onions until clear. Add the okra, tomatoes, vinegar, salt and Creole seasoning. Simmer 15 minutes and serve. Serves 4 Stewed Tomatoes and Okra 1/2 stick butter (or substitute 1/8 cup olive oil) 1 large yellow onion 1 package frozen okra 2 large tomatoes, roughly chopped 2 cloves garlic, diced 1/4 teaspoon thyme 2 bay leaves 2 tablespoons white vinegar 1 cup vegetable broth 2 teaspoons creole seasoning Melt butter in a large saucepan and add chopped onion and okra. Saute until onion is translucent and slime has mostly cooked out of the okra. Add all remaining ingredients. Season and then simmer slowly for 30 minutes or until i desired consistency. Serves 6.
