I have been busy planting and then I had to deliver some sauerkraut to two people and hauled home a bunch of free quart canning jars.
The day just caught up with me.

Fried catfish fried okra sliced apple sliced ginger and hush puppies on a bed of lettuce.

Thanks guys.
Now for the truth the Hush puppies were for display only I ate one of them and the rest were given to the neighbors dog that comes around.(Zeus)
I dont like hush puppies but I also dont like wasting food so I used the left over cornmeal and some other ingredients to make them.

The apple and sliced ginger root was something I dreamed up.
It may be out there some place but this just popped into my head.
Will I do it again, you bet I will, the apple and ginger slices with a little salt on them go fantastically with the fish.
So much so that I didn't bother using tartar sauce or ketchup just fish and the apples and ginger root.

Maybe I have strange taste but you at least have to give it a try.
I could see this going really well in a fish taco.

Here is where you take at least three cultures and blend them together nicely.
This would be the bomb in a restaurant or food truck.
Catfish fried okra ginger onion lettuce tostada with Cholula hot sauce on it.
I only cook what I have on hand many times and make do with what I have.
This is leftovers.

You forgot to mention the fresh avocado. That looks amazing! What's not to love there... fried fish, fried okra, ginger, avocado, hot sauce, lettuce and some crunch. You are right a food truck would sell out of those in a heart beat once word got around.

There isn't any avocado on them.
I love the things but they are expensive and dont keep well.
