Rob, I can get you a Saturday afternoon show on PBS. Your videos are like Paul in a lot of ways and like Juustan in other ways. Paul always sat on his stool with a cooker in front of him. He always wore his little white beret. Juustan usually cooked in his outside Patio kitchen. There are no good Cajun cooks on PBS right now. Can you tell some Cajun jokes while your cooking like Juustan?
Great videos! |

I bought a cheap beech wood roux spoon.
Not ready to use yet but sanded it down after whiskering it and putting on several coats of tung oil and letting it soak in. Tung oil is non toxic. |

I worked in the yard most of the day and made a simple meal that JUST ROCKS!!! I used this recipe for the marinade and made Korean BBQ beef flanken ribs. I used what I had for veggies but this came out great. Jasmine rice with the marinade reduced to a thick syrup, carrots and cabbage. I cooked them for 4 minutes per side like the video but they were still a little tough so I used scissors and cut them about 1/4" and that made all the difference. If I do this again I would use a cheap cut of beef and just slice it thin.
The puppy dog approved of the leftovers on the bones!

I buy those short ribs cut across the bones like yours in a Mexican meat market. They are pre marinated in a spicy, but delicious sauce. I cook them on the grill and they are super delicious.

Oyster dip
Ya'll need this for the holidays or special occasions, it's rich but soo good.
I made an Oyster/Shrimp dip sorta like Oysters Bienville. I made a video too, Chef John style this time. https://www.youtube.com/watch?v=Sk3C...ature=youtu.be

Liked the ideo, and the recipe sounds great, but really rich.
