Default Chicken and sausage gumbo

I used andouille and tasso. I even used store bought roux that's as good or better most most peoples roux. Also made a quick potato salad. The recipe is in the description.

The oyster dip looks delicious. I had a friend who made oyster dressing for his thanksgiving turkey. I never made it, but it sure sounded good.


I always thought the store bought roux was very good. It kept me from smoking the house up. My only problem was needing to rent a jack hammer to dig the roux out of the jar and then decide if I want to keep all the oil on top of the roux or toss it. I usually tossed it, cause it was just cheap vegetable oil and didn't add anything special to the gumbo.

Yep, it was burned and the smoke alarms were letting me know. Another time, I was trying a recipe to make roux in a microwave. You start by spreading dry flour over a plate and microwave it until it reaches the color you want. Microwaves don't cook evenly, so you are supposed to stir the flour around every couple of minutes. I didn't stir as often as I should have and the smoke alarms told me. It's all fun and flour is cheap. Our smoke alarms are very sensitive and when they all go off, it sounds like Pearl Harbor is being attacked again. Our dogs run for cover when the alarms go off. The flour wasn't really burned and the roux tasted better than I thought it would.

I'm glad you liked it. Did you make hot wings or just eat them like fried wings?

I really love the versatility of the pellet smokers, it's an outdoor oven with a hint of smoke flavor to a slow and low smoker.

Stay tuned, I'm in the process of making Tasso. A few more days and I'll post a video. Tasso is a spicy smoked ham-like pork used as a seasoning for gumbo, beans, greens or any other thing you would add ham or smoked meats to.

I used to buy cheap pork chops, cut them into strips; and slowly smoke the strips. I didn't want to smoke them very long or they would come out tasting like an outhouse after it burned down. I only used tasso as seasonings. It was too tough to eat like beef jerky.
