If I had the knowledge you apparently have, plus a really good place for all the prep and curing work as you have; I would also have a specialty shop selling cured meats, cheeses, and wines. Make a deal with a local bakery to also sell their bread loafs and rolls and you could provide a full meal deal to your customers. The bakery could hang some of your sausages for sale and you would sell their bread and rolls. Of course you would also have a huge jar of dill pickles and a jar of sour pickles on the counter.

I told my oldest, that's exactly what he needs to do (he really enjoys/ and is very good at it). I'm too old, and have too many miles on me. It helps that he, his brother and mother own the old hotel building, it's called The Loomis House. Funny you should mention pickles, one of the guys that helped us made 3 big jars of pickles, only 1 jar is left.

It sure looks good along with the rest.

Not sure what you are asking...
Jake (my oldest) and me did all the meat with help from friends. His brother (Joe)is a plumber and could care less. Their mom is in charge of the building. We split years ago, but are "civil" to each other, which is a good thing.

He called last night and said he had a vacuumed packed beef brisket, what should we do with it? We are making Pastrami today!

Turkey pastrami can be very good, depending on who makes it. Boar's head brand is good.



That hotel building is lovely! Must be great to have space to work in there.

Pastrami was originally made from goose breast, then goose breast became scarce and expensive but beef was cheap, hence beef pastrami. Turkey Pastrami would probably be pretty good, if you used whole turkey breast.

Yes it's a cool building, a lot of stories behind it... It was built in 1860 by a Judge named Thadeus Loomis from pilfered materials from a million dollar courthouse that was being built at the same time. The Judge had an underground tunnel that led from the hotel to the courthouse. The building is said to be haunted by the Judges partner that had the last name of Holliday who came up missing and was never found. The basement is spotless, the first floor now houses a tavern, barber shop and a pawn shop. Second floor used to be a restaurant with bar and commercial kitchen still intact. Third floor still has hotel rooms but haven't been used in years. The top floor is scary, I wouldn't go up there late at night with a cheap flashlight.
