My former wife is from St Lucia. The island is a former British possession, who brought a lot of Indian indentured servants there, who of course brought their cooking, which still remains today. I remember buying a chicken roti from a woman selling them out of her front yard. Anyone in St Lucia could own a bar or restaurant; there was no government regulation, and no food safety rules. The woman I bought from had run an extension cord to a folding table in her front yard, and was selling roti out of her crock pot. It was delicious, like a curry chicken burrito. They leave the bones in the chicken, though, which was culture shock for an American. If Taco Bell served a bone in a burrito, people would sue.
I really loved the lawless land culture of St Lucia. A restaurant was often someone's house. If they had pets, then the pets joined the restaurant guests. Petting the restaurant cat is not part of any dining experience in the US. Driving while drinking a beer was not illegal. My wife's Rasta cousin told me that smoking weed in public was normal, but don't let the cops see you...because they will stop their truck, get out, and demand that you share it with them. |

I have a good Naan recipe that is so simple. I'll look for it. It is a Steven Raichlen recipe so easily found.
My trick for toasting corn tortillas is to wet each one under the kitchen faucet, rest stacked for 10-20 min, then rub each one with oil. I use avocado or olive oil, just a dab with your hand....stack 5-10 tall and cut into pie shape or strips and lay out single layer on a sheet pan on parchment. I use a lower heat like 350-375 and watch them. The water wetting gets the layers to flake, and a bit of oil gives the crisp. Pinch of sea salt or a bit of spice rub. I just use the sea salt. |

I am not posting any food just some commentary.
Say you like or dont like or assuming anything about Mexican food is like a blanket statement about American food. First you have to look at Mexico history and you will see the food has had many outside influences. Our beloved and much celebrated Tex Mex is the same way. Mexico has had influences from Chinese to Lebanese and everything in between. Mexico hasn't always been Mexico it used to be called New Spain. The food including Texas food is a literal melting pot of just about every area in the world and so are the people. |

Cole, I had the good fortune to honeymoon in St Lucia with mrs Nematode. It seemed their independence had just been won and they were just enjoying themselves and finding their footing. There is a joy to people who have newly found their freedom that is like no other.
It was a beautiful and wild place. I prefer "Free" to "lawless" just sayin' |

He's like the George Washington of St Lucia And I guess lawless implies that there is crime, which there is, but it is not anything like the US, or at least certain urban areas in the US. Violent crimes are very rare. |

No, as St. Lucia demonstrates. It is possible to have a civil (in the sense of polite, laissez-faire) society without 90,000 pages of written laws. But everyone must respect the unwritten law.

Today I combined the ingredients of food from just about everywhere to create my own rendition of ""Authentic"" Mexican Tex Mex food.
From Asia to the Americas. The style is my own and some of the ingredients you cant buy anywhere. I cannot express to anyone just how good this stuff is I dont care if I did make it. Worth The carnitas where rolled in. Fresh cut jalapeno peppers. Kosher salt. Black pepper. Garlic powder. Onion powder. My own blend of Chile powder. My own homemade sweet fermented habanero hot sauce. Turmeric. Cumin. The juice of one lime. Cane syrup. Molasses. Place in an open pan in the oven and baked and basted 350 then finished at 500. Very tender. The salsa fresca was just fresh jalapeno peppers the juice of one lime onion garlic powder salt black pepper and Mexican oregano. My homemade frijoles Rancheros from the other day with potato added. Home fried crispy corn tortillas. Just hungry.
Surprisingly it isn't hot. I have never cooked pork like this before in an oven. Has all the flavor of a good southern BBQ without the smoke. I also ate several of the fried tortillas with just the salsa spread all over them. Thanks guys. Worth |
