They are starting to have more pigs feet and even cows hooves are on the market at the store in town.
We have just about everything you can eat from an animal at the store.
Cultural and or ethnic demographics plays a huge role in the stuff they have and who buys it, not to be confused with race, 'that has nothing to do with it.
It is where your roots are and where you come from.
My cultural roots come from my father and mother who where raised on rural food people ate from the late 1800's.
Rural roots are by far different than urban roots.

I've been in a lot of huge packing houses while animals were being processed. For the most part, the process in the larger plants is as humane as possible so long as it is understood that the whole point is about changing a living animal into a packaged product ready for the consumer to take home, cook; and eat.

In some of the smaller processing plants, they don't have the money to invest in automated equipment so the process is more crude and probably less humane, but the end result is the same.

What a great pic Gerardo..and it sounds like a great story behind it too! Do they use both of those exclusively to make hot sauce or for many applications. I remember at some point you posted a link about some hot sauce you like but we couldn't get it here..I think that was your post at least!

I don't know how I stumbled on this video today, but it is simply one of the best things I've ever seen... Didn't know where to post it, if not here.

I'm used to thinking of polar bears as very scary critters that break down people's doors and walk away from a collision with a snow plow.

And they are scary beasts, but have a gentle side as well.
