Got the new Mirro Gasket in the mail for my 6 quart pressure canner/cooker and it is working wonderfully at 15 PSI.
Before with the old one it would only hold 5 PSI and would blow at 10. Top secret modification in the works. Worth |

I think waiting until the jars have cooled completely maybe makes it look slightly better, LOL. And yes, the pork and sweet potato soup is as close to Jason's Deli version as I could get taste wise, so it IS good, just looks odd in the jar as the pork was so tender is almost shredded putting it in the jars. Beef chuck roast, par cooked in broth. First one still warm, next is this afternoon. |

Ah, I forgot my helper! She will sit under the kitchen stool and watch what I am doing as I move around the kitchen. Not a good picture, but then she is either running about or dead asleep somewhere. That is the seat of a dining room chair and she is as big as she is going to get. And, yep, one ear got nipped when she was "fixed" as she was done for free under the feral cat thing. |

Your Ms. Minnie has a heart on her chest! What a pretty cat she is, too. Does she have the black on the backside of her paws and a little ways up her legs?
Piggs doesn't have the rufous coloring as Minnie has, and Piggs's muzzle is more pronounced ( siamese blood in that line). Toms come and go in the colony, but the queens stay for the most part. Does Minnie observe you a lot? Piggs seems to be trying to figure what or why I do what I do, LOL. |

Found this on a University of Minnesota web site.
It is wrong and I will explain why. """Process in a Dial Gauge Pressure Canner at 11 pounds pressure or in a weighted gauge pressure canner at 15 pounds pressure. Process pints for 35 minutes and quarts for 40 minutes.""" The weighted gauge pressure canner should read 10 psi not 15. I am assuming they are talking about a pressure canner that has no gauge and only a weight for 15 PSI. I would never use something like that as it would over process anything at or below 1,000 feet. But they do have them. So if you do have a weighted gauge canner and it has the numbers 5,10 and 15 PSI on them feel free at 1,000 feet or below to use the 10 PSI. This isn't something I grabbed out of the stars it comes from the center for home food preservation. It is for potatoes. Worth |

Yes, the girl is all up in my shizzle. I think she's finally given up on the computer after years of puzzling. Now it's, "why is that hand on the mouse instead of on me?" Manual tasks, depending on location, will generally sprout a cat. In the "garden" she lurks until she spots some dirt, then goes and lies in it. Folding clothes on the bed is practically impossible. I have to put it down to thwarted hunting activity. Her ancestors would be out in the jungle slaughtering poor defenseless fuzzies: a very stimulating activity. In here she has to wait until the big lump moves, then attack it's ankles. Or clean clothes. One wonders where Darwin will take the domesticated feline henceforth? Tiny cat phones?

You didn't read the whole page on canning potatoes, Worth.
"Vegetables may be canned without salt. Salt adds flavor but does not prevent spoilage. If you use a weighted-gauge canner and can at an altitude less than 1000 feet, you may use 10 PSI instead of 15 PSI for the canner pressure. This will improve nutrient and quality retention of the vegetables.
