I have never heard of anything like that in my life.
Where I went to school at their biggest concern was how many kids showed up drunk or high on drugs.

There is a big hole in the middle I have had the worst luck making bread with all of the rain.

This wee little thing will be heading north with me along with some summer sausage and a few other treats.
It is a chunk of cured pork that will smoke all day and into the night.

Thanks everyone for looking at the pictures and your kind words also.

Sort of, it is the same thing you would get a rib eye from in beef.
I smoked it until the temp got to 145 and shocked it in ice water so the temp never got above 150 let the temp get back down to 120 and pulled the thermometer.
It took about 8 hours.
This thing is a little salty and should be eaten sliced very thin like Prosciutto.

It should be brick red on the inside and moist.
