Oh me oh my that eggplant sandwich looks so delicious how did you prepare the eggplant, did you bread it? I see cheese also, it looks glorious!

Hey raindrops! I just tossed the slices with some garlic olive oil, dried thyme and salt and pepper and grilled them quickly in a stove top grill pan. I toasted the rolls, piled them high with the grilled eggplant and topped with fresh mozzarella, some store bought marinara (because my tomatoes haven't quite started coming in yet), and some basil from the garden. Two minutes under the broiler and you're good to go!

Looking good, Kelli! I have some tiny eggplant, and I mean tiny, lots of peppers but all still in the green stage and should have tomatoes to pick here shortly. We have been up to our eyeballs in green beans and now the squash and cucumbers are coming in. Making pickles tomorrow. Thanks for sharing your pictures.

Hey Michele! I didn't leave any room for my beans or squash this year (oops...too many tomatoes!) and I am really regretting not having my own homegrown right now! My cukes are really far behind with all this cloudy weather we've been having. Plus, they had to be re-seeded due to some hungry rabbits. I certainly am jealous of your (future) pickles! I have lots of green peppers and tomatoes as well (seen below). Best of luck to you

10" of rain the June so far, my plants are not even 2 ft tall. Tiny guys, and all the names are mixed up as i lost plants early. I got 6 plants overgrown in a store for only $2 which are not growing for 2 weeks.

Wow looks terrific! I am so bad about my garden this year, i barely have time for it so I'll be happy with whatever I can get. I have greenies too, and a few Flamme and 4th of July PL looking ready to turn soon .
That eggplant sandwich looks amazing, lol.....time for my breakfast!

Lakelady and Filmnet: My tomatoes are definitely further behind then they were last year. I was harvesting slicers and bunches of cherries by the middle of June 2012. I guess the trade off is less heat stress (since everything quit producing for me from end of June until August last year). Less Septoria than last year, but what looks like Grey Mold is starting on my Black Cherry. Better head over to the disease forum and figure out a game plan. Best of luck to everyone. Cheers!

I know this is turning out to be a bit of a garden journal thread for me, but I am just so excited to share how things are going! Below is a picture of my garden "haul" from yesterday. You can see my first ever Cherokee Purple in the center, just breaking color The Second picture is of some Bread and butter pickles I made with the Jalapenos and Banana peppers I picked. The third pic is of dinner last night: Grilled Chicken and Eggplant with Caprese "Salsa". It was a definite hit with the hubs. I hope everyone is dealing as well as possible with this crazy weather. Hey Sjoella! Please see below:
Caprese "salsa" 1 pint cherry or grape tomatoes, cut into fourths 1 large clove garlic, minced 6 oz of fresh mozarella, diced 1 large handful of fresh basil leaves, minced 2 TBS good olive oil 1 TBS aged Sherry or red wine vinegar Kosher salt and fresh ground black pepper to taste. Mix all of the ingredients in a bowl and adjust to taste with salt and pepper. Can be served on toasted bread round or over cooked chicken or pork. Also good tossed with cooled pasta for a mayo-less pasta salad. Cheers!
