Tom, I am so envious! My husband and I have made so many journey's up and down the Blue Ridge Parkway over the past 15 that we've lost count. It's a beautiful area.

On the green ones - when frost looms I pick all the peppers, green and red, and put them in tubs at room temperature, where they continue to ripen just fine. I just go through the tubs every other day or so picking out the ones that have gone bad and the ripe ones, which I either ferment for hot sauce or dehydrate. Relatively few go bad.

What a beautiful view! Have you thought about smoking any of your bumper crop? Smoked, dried pods are good in a lot if dishes and easy to store. Congrats on your great season!

I had 7 Serrano's plants going this year. They pumped out a massive amount of peppers. I didn't really like the peppers after they turned red. They were soft and mealy to me as opposed to the nice crisp crunch of the green ones.
I wasn't paying attention to what i could do with the reds one either. I will half to try making some hot sauce out of them next year. I think I have 21 or so jars canned up with the green ones atm. I think I have finish off one pint so far. Momma is bringing me a fresh jar of them now. Edit: I just dropped about 5 of them into my beef stew. They still have some crunch.
