I for one do associate taste of my produce or any produce with brix. Am fascinated by teaching of Dr Carey Reams.

Brix is related to specific gravity.
SG of pure water is one. Now if you disolve sugar or salts in it, its sg will go up. Now in fruits and vegetables there aren't that much salt so sugar contents account for increase in sg.
I know they have a brix measurement in wine making. I have made wine few time. The measure of brix can determine the eventual alcohol contents, since it is the sugar that is converted into alcohol.
"The BALLING or BRIX scale shows the percentage of sugar by weight "
For example brix of 10 correspond to about 4% ( by weight ) sugar contents of the juice. JMO
