Read a book and long nap under the fan, that is what I am planning. .
Took pictures ate and about to pass out.
Got it in the house just before the real heat hit.

Rajun, I watched a lot of your videos. My wife watched the ribs video, and we cook them a lot like you do. The seafood videos were more to my taste. I agree, a good shrimp stock takes food to another level.

I shut the dampers down on the offset smoker and have coals left for today.
Today I will take one of the three bargain steaks and grill it.
Not often you see a nice bone in ribeye for less than $6.00 a pound around here.

Paleo steak unbelievably tender too.
Salt black pepper powered garlic and olive oil on both sides.
Cook for four minutes one side then three on the other.
No constant flipping just flip one time.
Let rest for ten minutes while pasta is cooking for fettucine Alfredo.

Yes Sir, That'll do!!!!

Pro Tip: Use the charcoal chimney loaded and fully burned to ashed over screaming hot, put a grate on top and grill that steak.
