When I worked in Houston in the 80's I was getting ready to drive to Illinois for thanksgiving, the guys I was working with (most of them from St Louis) pooled their money together for me to pick up 50 cases of Busch beer as you couldn't buy it in Texas then. I was returning on a Sunday and decided to buy the beer in MO thinking it would be cheaper, not realizing they had a blue law only permitting sales of 3.2% alcohol beer. I bought 50 cases not knowing it was 3.2, oh were they tee'd off. They never asked me to pick up beer again!

Waiting for this so called "Mother" to show up is driving me nuts.
I keep sniffing and smelling the darn thing.
One thing I think is going on is it might, 'just might, be smelling sweeter.

It might take 2-3 months to get the mother, be patient.

I'm not for sure but I think the mother is starting to form at the bottom of the jug.
Plus it has taken on a different but pleasant smell.

Should be at top of jug... you probably already had a mother, which sank, you will have a new one on the top, soon.

My nose isn't what it used to be, but you can smell it when it changes over to vinegar. Now that I have a mother, I'm ready to start more (port, merlot, Cabernet) and some whites Chardonnay, Spatlese, Reisling...
Soon as I get to the far corner of the cave it's stored in... I'll get pics!

Just acquired some half gallon jars, but the lids are junk... Don't need them making vinager!
Mix the wine and mother in the jar and cover with a coffee filter and rubber band.

I dont think mine is doing anything because where it is it's too cold.
May have to move it to the warmer hall closet.

The one I started is sitting in limbo.
Another bottle of wine I let sit with the lid off is going to town from natural stuff in the air.
It is smelling like vinegar big time.
I have no idea what it will be like or if it might kill me if I try it.

I've got 3 batches going. I think temperature has a lot to do with how fast it gets started.

My Sltory.
I started some , moths ago, from my tomato wine. No mother vinegar. So I thought addling some Balsamic vinegar to it. I have a 1/3 full bottle of itm. Hmmm !surprize ! There were several MV at the bottom. So i fish them out and put them in my vinegar making batch.
What is going on with Balsamic vinegar ? Where did the mother com from ?
My theory is that the BV must,ve had unfinished wine in it, plust some sweet stuff. So the yeast converted the sugar to alcoloe and the vinegar bacteria conveted it into vinegar and formed MV.
Interesting development.
