I love me some Steens, grew up on that.

So what recipe did you decide to use? I'm just curious, maybe I'll try to find Cajun recipe and play around too.

I'd probably love fruitcake without the fruit - just the nuts and other ingredients would be fine. I guess it would just be called nutcake at that point!

Cajun fruitcake- does that include blackened fruit, hot peppers, and Tony Cachere's?

I researched a nut cake and found the "Stollen". I might try to make one. The first one I found just had nuts in it.

All I saw were raisin cakes (Stollen) when I went to the link? I like raisins from a box all by themselves, but not cooked in anything. I did run across a few banana nutcakes, which happens to be one of the fruits I don't mind cooked in a recipe (cherries, blueberries and apples being the few other fruits I like cooked).

Steens has a recipe but I haven't made my mind up yet.
All I am really interested in is the batter.
Thinking about re-hydrating the fruit in bourbon and rum just not bourbon and rum mixed.
Came home and crashed, been a hard stressful week head stopped up and eyeballs hurting from the weather.

Worth, are there any bulk food stores near you? the ones around here usually carry a selection of the candied fruit starting in Nov-ish. and if i remember correctly I think I have seen some of the dried and candied fruit in the baking section at Walmart during the holiday season. I don't buy this stuff, I don't make fruit cake, I just think I remember seeing this stuff there at some point... I could be wrong as I rarely shop in these stores. I hate shopping in general ( and with people who shouldn't have a cart in their possession let alone a drivers license)...completely. I went through the parking lot yesterday coming home from picking up a couple things for my mother in law and this person backing out of an angled parking spot needed 100' and still managed to back over the sidewalk to get out... one is bad enough a whole parking lot with many like this... oyvey!

I had to go back and find it. I ended up here looking for Christmas cakes, then Stollens popped up and I ended up on Challah.

Rajun.. that looks easy enough and delicious. I already printed that off to give it a try. I have a Christmas farmers market I just may five this a whirl and sell it there. people like to eat but making bread intimidates most of them...or they fail the first time and won't try again.

Now that looks pretty good! Can probably also do something like that with pecan pie filling and crushed pecan on top too!

oh oh ! that sounds fabulous too. do you think you could make your own marzipan and substitute pecans instead of almonds? or would it just not work?

Sure, butter, powdered sugar, milk, vanilla, pecans, pinch of salt, and a pinch of cinnamon in a blender might work just fine.
Maybe even a praline paste would be good too.

I'm a pecan pie junkie and love this idea.

I know a lady that sells pecan bread at the markets but it's not inside just topped.
